After months of impatiently waiting, our new Pasteuriser FINALLY arrived from Italy last month. We unpacked our wonderfully shiny, very fancy and expensive piece of equipment and marvelled at how wonderful it was and how much easier production would be. It is a 500L batch pasteuriser with all the bells and whistles. Compared to our old 100L pasteuriser it looked like beautiful behemoth….

Unfortunately, all was not as it seemed.

Our ‘3 day Installation’, turned into 5 days, then 10 days and now the pasteuriser is sitting there looking pretty and not doing one darn thing right. We’ve had industry specialists and countless phone calls to the manufacturer trying to figure out why it won’t do what it needs to do, all to no avail.

In the meantime we’ve had to process with the old machine – usually during the night or VERY early in the morning because when the technicians are here they turn the power on and off and we can’t bottle milk or make Gelato while that’s happening. We don’t mind pulling late nights and we’ve got plenty of experience with early mornings – but after burning the candle at both ends for the last month (along with all our other commitments, markets, small child etc) Kel and I are both about ready to call it quits….

But we won’t.

We are in limbo. We’ve been annoyed and disappointed, frustrated then angry, and we’ve both sworn enough to make a sailor blush. We will hopefully have another technician here this week, we’re waiting on specs from Italy to come through and have called in all sorts of favours to try and get things moving but we’re still not there yet.

What this means is we don’t have a huge amount of milk available. It will still be available at all the normal outlets but sometimes there is not enough. We have retailers asking if they can double their order, which we just cant commit to yet. We have a waiting list of places wanting to stock the milk and we can’t give them an indication of when that supply might be available. We had anticipated being able to introduce 2L bottles to the general public on a regular basis but that won’t happen until the Pasteuriser is working.

So we want to thank you for supporting us, for buying our milk and for your patience throughout this time. We couldn’t have anticipated such a lengthy delay and apologise to those that may miss out on out milk or who are awaiting the 2L bottles.
